1 Cup of Diced Onion
2 Cups Diced Tomatoes
½ Tsp Salt or Nyama Choma Seasoning
½ Cup of Oil

Cooking Tip: Make sure to rinse your Collard Greens removing all dirt and sand before cooking
HOW TO DE-STEM COLLARD GREENS
Step: Prepare your collard greens by removing and discarding the center stem of the collard green
Prepping Tip: hold the base of the collard green stem with your index finger and thumb, and pull the leaf with your other hand through the two fingers, separating the leafy greens from the stem/core
HOW TO CHIFFONADE THE COLLARD GREENS
Steps: Stack leafy greens on top of each other on a cutting board,and tightly roll the greens into a cigar/burrito shape, hold the roll against the cutting board, curving your fingers take your knife and thinly slice the greens in a crosswise motion to create thin ribbons of greens cutting incrementally down the roll. Repeat until all greens are cut.
HOW TO MAKE SUKUMA WIKI
Step1: In a large pot over medium heat add oil.
Step 2: Once oil is heated add onions and saute until the onions become translucent (1-2 mins).
Step 3: Add Diced Tomatoes and saute for 2-4 mins.
Step 4: Add salt or Nyama Choma seasoning to taste.
Step 5: Once tomatoes start to break down add collard greens and stir until all greens have wilted down (Cooking Tip: Cover the pot with a lid for 1 min to wilt the greens faster, remove lid and continue cooking process).
Step 6: Simmer and stir greens for 10-15 mins, and serve hot.
